Cultivar Differences on Nutraceuticals of Grape Juices and Seeds

In this study, nutraceutical properties of fruit juice and seeds, which are important for human health, green (Kabarcik, Cavus), red (red Globe) black (Honusu, Yildiz, Yediveren Helvani) skin colored grape cultivars grown in same ecological conditions were investigated. Harvest period, number cluster form, weight, berry color usage area determined as morphological parameters. The Folin-Ciocalteu method was used total phenol content analysis. antioxidant status juices seeds have been by 2,2–diphenyl−1–picryl-hydrazyl–hydrate (DPPH), ferric reducing power (FRAP) trolox equivalent capacity (TEAC) assays. Seeds all exhibited higher nutraceuticals than juices. Total phenolic seed samples found to be quite variable range 1.90 mg GAE/g (cv. Yildiz)–3.46 Honusu) fresh weight base (FW), indicating 2 folds differences between cultivars. Green also showed the lowest highest 1.69 Yediveren) 2.45 Honusu FW). analyzed high content. Of different cultivars, peel-colored had values combined better traits with an excellent qualitative profile cv. Helvani.
